This course outlines the HACCP principles based on Codex Alimentarius requirements and the benefits and common pitfalls of developing, implementing and maintaining a HACCP system. It explains how to align a HACCP system with a management system based on ISO 22000 or ISO 9001 and to conduct effective food safety risk assessment and control measurement categorisation.
